Welcome to the new chapter in our culinary adventure “Island Flavours”, highlighting the different flavours of Grenada: CINNAMON, derived from the Arabic and Hebrew term ‘amamon’ meaning ‘fragrant spice’. All private chef services or cookery lessons feature a lovely cinnamon-scented 3-course menu, created by head chef Lorry Francis especially for Island Flavours.

APPETIZER ~ SAVOURY CINNAMON BRUSCHETTA
A cinnamon and spice savoury biscuit half, topped with diced pumpkin and gratineed golden brown.

MAIN COURSE ~ CINNAMON SPICED LEMON CHICKEN
Plump Caribbean chicken thighs marinated in lemon and
spicy-cinnamon, then baked to golden perfection and served
with saffron rice.


DESSERT ~ CINNAMON TWIST PONCHE-DE-CREME
Traditional Christmas egg and cream punch swirled with a
cinnamony twist and a spicy cinnamon stick to stir.
